White Chicken Chili

When was the last time you enjoyed a different kind of chili?

Today’s recipe comes from our special friend Shirley who lives in Florida. We’ve known Shirley for many years having attended the same church at one time. At first, I knew Shirley from a distance. She and her husband, Howard desperately wanted to begin a family. I do remember of praying for her at various times for the miracle of childbirth to be theirs. That desire became reality.
Their precious and precocious daughter was so eager to enter into this world that she didn’t even wait for Shirley to get to the hospital! An unplanned, home birth took place in their town home! All was well though. Several months after the birth of their daughter, Shirley and I became better acquainted. I could see that Shirley was struggling with some physical health challenges. She was fatigued and didn’t feel well. At that point we began working together more closely. Shirley was an eager student and wanted to know how to better care for herself and her family using more natural ways.
We’ve worked together off and on over the past eight years or so. Howard and Shirley made a move to Florida during that time as well. As Shirley puts it, “We live in Central West Florida, along the coast and the beautiful clear waters of the Gulf of Mexico!” Shirley has made many dietary and lifestyle changes over the years. She also is disciplined in taking various, high quality supplements and keeping up routinely with exercise. She is now the director of a very busy preschool. There was a time when she could never have done that. She didn’t have the energy, stamina, or physical health to do such a thing. Hers is a wonderful story of restoration and healing.
She makes this recipe for her staff at the preschool. I’ve made a couple of minor adjustments and substitutions to her recipe but it’s still delicious. The recipe calls for canned, great northern beans. Feel free to buy dried great northern beans or dried navy beans. Soak them overnight, and then cook them for several hours until soft. Proceed with the recipe as written. You’ll also see that I use arrowroot in the recipe. I talked about arrowroot in the 8/12/08 Daily Gram. It’s used as a thickener and is healthier than cornstarch.
