How many ways can you think of to prepare sweet potatoes?

The Nutritional Coach is back in the Wellness saddle for at least the near future.  Caring for aging parents presents many challenges and living eight hours away adds to the challenge.  This entire issue has enough substance for several DailyGrams.  However, I’ll not venture into those waters yet.

Continuing with the crock pot theme that I began at the beginning of the month, today’s recipe is so simple that it’s almost a non-recipe.  It’s more of a “healthy tip.”  Nonetheless, I know there are many readers who may not be familiar with this idea.  I actually stumbled across this many years ago.  When I used to make potato salad, I never enjoyed cooking the potatoes in water, allowing them to cool, peeling them, etc.  It seemed rather messy and the starch from the potatoes would adhere to the sides of the pan, making the pan a chore to clean.

Notice, I said when I USED to make potato salad.  I rarely cook or eat white potatoes any longer since they are high on the glycemic index, causing the blood sugar to elevate and thus causing the body to store fat.  However, when I did make potato salad, I wondered if there wasn’t an easier way to cook the potatoes.  I experimented with putting them in the crockpot.  They turned out great.  They cooked evenly, without water or mess.

Fast forward a number of years when we began eating more and more sweet potatoes.  When I worked on creating a healthy sweet potato casserole for the holidays, I needed three to four cups of cooked, mashed sweet potatoes.  Hmmm, I wonder?

I’ve written about the many benefits of the lovely sweet potato in several previous posts.  We are lovers of this nutrient-dense, vitamin-rich, yellowish-orange root vegetable that God created.  Now is the time to enjoy them at their peak.
